Can you tell me the benefits between using Windows 2003 Standard or Enterprise with Microsoft Virtual Server? Would I be able to run more virtual machines with one as opposed to the other?

If you're talking about hosting Virtual Server on either Windows 2003 Standard or Windows 2003 Enterprise, the big difference here is how much memory either of them can address.
