You don't need to install the Guest Support software to run Linux in Virtual Server, but it provides some tools that make life a little easier -- better display support, for one.
The versions of Linux that have been tested and found good with the Linux Support Tools are listed on the tool's download page -- mainly Red Hat Linux and SuSE Linux. Red Hat's Fedora should also work. If you go to the newsgroup microsoft.public.virtualserver, you can almost always find good advice to get the tools to run in most breeds of Linux.
