I am embarrassed that it has taken me such a long time to answer this question, and the only answer I will give is that of what may appear to be at first glance a thoughtless and terse one. Installing Windows Server 2003 Standard Edition in a VM boils down to simply putting the CD into the VMware server and using the physical media or mounting a Windows ISO and then following your regular build document.
